How do I know soffits and gutters installed properly?
I have new gutters and soffits installed. Before it was wooden.
At the roof corner I can see filler in the gaps.

There shouldn't be any filler they haven't cut it right and bodged it up
Check for leaks buy walking around the property.
Check for water dripping over the edges.
Check for water flowing away from the property.
Check for gaps, between the drip edges and fascias boards.
Check guttering extends pass the roof edges.
Check that fixing are all tight.
You are right to be concerned. Gaps are perfectly normal (2-5mm) as they allow for movement however they should be covered with a trim, not filler.
Everything should be sealed. If they haven’t got a flashing to cover the corner then they should be modifying a flashing to close the gap off
